Bengali Mishti Pulao / Sweet Vegetable Fried Rice

After a long stretch of scorching summer days  , rain god relieved us with a few days of shower. Its raining for the past three days, today being saturday thought of preparing  Mishti Pulao / Sweet Vegetable Fried Rice ( a delicacy enormously enjoyed by the bengalis ). This is a very simple recipe with some basic ingredients and gets prepared in minutes. We bengalis have a sweet teeth , we love almost anything that is mishti . But at the same time we also like to keep a balance of flavours in our meals. So , we generally have Mishti Pulao / Sweet Vegetable Fried Rice with spicy chicken / chicken kosha. Therefore , my menu for dinner tonight is  Mishti Pulao / Sweet Vegetable Fried Rice with Spicy Chicken / Chicken Kosha. In this post I will be showing Mishti Pulao recipe. Preparation time : 5 mins
Cooking time : 15 mins
Servings : 4

Ingredients :


  • oil 
  • salt to taste
  • sugar to taste or near about 15 teaspoons
  • carrot 2
  • raisins a handful
  • bay leaf 2
  • cashew nuts a handful
  • french beans 300 grams
  • you may add other veggeis too of your choice
  • rice 4 cups
  • water 8 cups
  • dry red chilli 2
  • whole cloves 2 to 3
  • cardamom 3 to 4
  • cinnamon 1 inch stick
Process step by step :

1. cook rice in a vessel ( remember to half cook it ) and keep aside.

2. Wash and finely chop the veggies ( carrots and beans )

3. Keep the whole spices raisins and nuts ready.


4. Heat oil in a kadai or a non-stick pan


5. Once oil gets heated up , add the whole spices bay leaf and let them splutter. 


5. Now add the finely chopped vegetables and saute for a couple of minutes.


 6. Add rice to the lighty sauted vegetables.


7. Mix rice well and add sugar & salt at this stage.


8. Finally check the seasoning and make sure that the rice is perfectly cooked by now.


9. Serve hot with spicy chicken.
